Hello -- Much to my surprise, I managed to get two monitors going. Now I
want to turn this feature off from time to time -- when I'm home using
RealVNC to view my office desktop.

I can't figure out how to turn it off so that I only have one monitor again
and bring all the windows back to that single desktop.

Thanks,

PeterJordan

Before turning this feature off, move everything back to the monitor which
you are going to use then:

Right-click on Desktop choose Properties
Click Settings tab
Uncheck the Option "Extend to this monitor" as said by "Shenan"

Hope this help, let us know!
