I put in a cd while using MCE and it gives me the option of copying it. Well,
I clicked copy, and one of the steps gave me the option of either encoding it
to a low bitrate WMA or a lossless WMA. I wanted the lossless, but must have
clicked the wrong one, because it's giving me low bitrate. I tried going back
to that orginal screen, but when I click Copy CD now, it just automatically
encodes it to low bitrate and doesn't give me the choice for lossless. How do
I change it? I know I can encode music outside of MCE, but would prefer to do
within this software as it's easier to see on my TV.

Tools>Options> Rip Music tab. That's where the settings are.
