It depends on what section of the Start Menu they are located in. If they
are on the right side, you can remove these by right clicking the Start
Button and selecting Properties/Start Menu tab/Customize Button/Advanced
tab. In the start menu items list, you can either select "Do not display
this item" or simply remove the check mark from the item.

If the item is on the top/left of the start menu, right click the item and
select the "Remove from this list" option.

If the item is on the lower/left of the start menu, right click the Start
Button and select Properties/Start Menu tab/Customize Button. In the
Programs section, set the number of programs to Zero and click the Clear
List button.

From where in the start menu?

You can remove items in the left column of the XP start panel by right
clicking on them and selecting Remove from This List. Some of the remaining
items on this part of Start can be added or removed by using the Start Menu
properties sheets. Right click the start button and select Properties. Then
click the Customize button to see what your options are.

Remove folders and shortcuts from the (All) Programs portion by right
clicking on an item and selecting Delete.

These things are just shortcuts. Removing them only removes the pointer to
a program. If you want the program to be removed as well, use Add/Remove
Programs to uninstall it.
